Dear Elviira,
I want to thank you from the bottom of my heart for writing such an inspiring cookbook. It has it all: beautiful photography, creative yet clear recipes, and simple directions. I need the easy part!
I am a typical cook—I tend to prepare the same six or seven meals over and over. I’m sure many people are the same. On a high‑fat, low‑carb plan, that repetition becomes even more limiting. Some days I struggle to get enough nourishing fats into my meals.
I’ve been afraid of vegetables because I don’t always know how to estimate carbs, and I need to stay under 20 grams of carbs a day. Elviira’s charts give me accurate carb and fat information, which encourages me to add more vegetables instead of just sticking to lettuce. For that I am truly grateful.
The beverage section of the book has been especially helpful. I gave up diet sodas more than a year ago and have tried to avoid additives and chemicals. I used to drink a lot of Coke and Pepsi, and I don’t enjoy plain water, so finding appealing, natural drinks has been a challenge. Elviira’s drink recipes are inventive and delicious—something I never would have created on my own. Finally, I have more to drink than just coffee and tea.

I especially want more dessert options, because having satisfying treats reduces the temptation to reach for chips or other less healthy snacks.
