The exact origin of hot honey is unclear—some trace sweet-and-spicy condiments to different global traditions—but what’s certain is how well honey and chile play together. This homemade hot honey is quick to make and keeps well, so you can drizzle it on many dishes.

What You Need To Make Our Hot Honey Recipe

Honey. The base is, of course, honey. Local raw honey is a great choice for flavor and texture, but you can select a variety that pairs with what you plan to serve it with. Strong, aged cheeses pair well with denser honey varieties, while floral honeys work beautifully with creamy cheeses.

Red pepper flakes & hot sauce. For heat we use crushed red pepper flakes and a splash of hot sauce. You can adjust both to control the burn and the character of the spice.

  • Aleppo pepper: Mild, fruity heat with a slightly cumin-like aroma—good for a rounded, gentle warmth.
  • Ancho pepper: Dried poblano with sweet, raisin-like undertones—adds depth without extreme heat.
  • Chipotle: Smoked jalapeño for earthy, smoky heat.
  • Urfa biber: Turkish pepper with smoky, slightly sour-sweet notes—adds complexity and intrigue.

Sweet paprika. Sweet paprika or mild chili powder adds color and a smooth, slightly smoky sweetness that pairs well with honey.

Vinegar. A small amount of vinegar brightens the sweetness and balances the flavors. Apple cider or red wine vinegar are good options for their subtle acidity.

Extra virgin olive oil (optional). A splash of a good olive oil softens and rounds the mouthfeel. It’s optional but recommended if you like a slightly richer texture.

Hot Honey Ingredients

Serving size: about 1 cup

  • 1 cup honey (local or organic recommended)
  • 1 tsp chili powder or sweet paprika (ancho chili powder is a nice choice)
  • 1–2 tbsp hot sauce, to taste
  • 1–2 tbsp crushed red pepper flakes (start with 1 tbsp and increase if desired)
  • 2 tbsp red wine or apple cider vinegar
  • 2 tbsp good extra virgin olive oil (optional)

Directions

  1. Combine the honey, chili powder or paprika, hot sauce, crushed red pepper flakes, vinegar, and olive oil (if using) in a heatproof jar. Stir to blend the seasonings into the honey.
  2. Place a medium pot on the stove and set the jar (lid off) in the center. Add enough warm water to the pot to come about halfway up the jar.
  3. Heat the pot over medium heat until the water simmers. Let the jar sit in the simmering water for about 5–10 minutes, gently warming and infusing the honey. Avoid boiling; high heat can change honey’s flavor and reduce its beneficial properties.
  4. Carefully remove the jar and let it cool to room temperature before sealing. Store at room temperature in a tightly closed jar; it will keep for up to six months.
