How to make healthy cranberry orange muffins

Ingredients

  • 1/2 cup plain 0% Greek yogurt
  • 3 tablespoons olive oil
  • 3 tablespoons freshly squeezed orange juice
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup organic cane sugar
  • 1 1/2 cups fresh cranberries

For the glaze

  • 1/2 cup powdered sugar
  • 1-2 tablespoons freshly squeezed orange juice (see notes)

Instructions

  1. Beat together Greek yogurt, olive oil, orange juice, vanilla extract, eggs, and sugar until well combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Add the dry ingredients to the wet ingredients and stir until just combined; do not over-mix.
  4. Fold in the fresh cranberries gently.
  5. Fill muffin liners three-quarters full with batter. This yields about 12 muffins.

  7. Whisk together the powdered sugar and 1–2 tablespoons of orange juice to form a glaze. Use 1 tablespoon for a thicker glaze, 2 tablespoons for a thinner, more citrus-forward glaze.
  8. Drizzle the glaze over cooled muffins. Store in the refrigerator and serve warm or chilled; chilled muffins have a firmer glaze and a texture similar to a light frosting.

Notes

  1. Use 1 tablespoon of orange juice for a thicker glaze or 2 tablespoons for a runnier glaze with bolder orange flavor. If chilled, the glaze firms up nicely and tastes great.
