Ingredients

  • 24 ounces large white mushrooms
  • 2 eggs
  • 1 cup almond flour
  • 1/3 cup ground pork rinds (or additional almond flour)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (204°C).
  2. Lightly spray the air fryer basket with cooking spray.
  3. Whisk the eggs in a medium bowl. In a separate bowl, combine almond flour, ground pork rinds, salt, pepper, garlic powder, onion powder, and paprika.
  4. Dip each mushroom in the egg, then coat it in the almond flour mixture. Place mushrooms in a single layer in the air fryer basket; do not overlap. Work in batches if needed.
