Traditionally served at the annual cricket match between Eton and Harrow, this dessert is as easy to assemble as it is delicious.

I first came across Eton Mess in a food magazine and immediately appreciated how ideal it is for a lazy or last-minute dessert. You can make meringues from scratch, but buying pre-made meringue cookies will save time without sacrificing flavor. I usually whip my own heavy cream with a little vanilla — it only takes a couple of minutes with a handheld mixer — but store-bought whipped cream will work in a pinch.

In this version I use raspberries tossed with a bit of sugar and a splash of Prosecco to help them macerate and release their juices. The Prosecco is optional — simply tossing the berries with sugar and allowing them to sit will soften them and pull out their natural juices. You can substitute any berries you like, or even use finely diced stone fruit or mango for a seasonal twist.

On a recent cooking retreat I discovered an accidental variation: I packed almond extract instead of vanilla and used it in the whipped cream. The subtle nutty note was unexpectedly delightful and shows how adaptable Eton Mess is to small changes. Use extracts, liqueurs or citrus zest to give the dessert a personal touch.

Ingredients

  • 2 pints raspberries (or mixed berries)
  • 2 tablespoons sugar
  • 1/4 cup Prosecco (optional)
  • 1 1/2 cups heavy cream
  • 1/2 teaspoon vanilla extract (or a few drops almond extract)
  • 4 meringue cookies, roughly broken

Instructions

  1. Toss the raspberries with the sugar and Prosecco (if using) in a medium bowl. Let the berries macerate for 25–30 minutes, stirring occasionally and gently pressing with a fork so they release their juices. If you skip the Prosecco, allow the berries to sit longer so the sugar can draw out the juices.
  2. In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. Take care not to overwhip; you want a light, billowy texture that folds easily into the berries and meringue.
  3. To assemble, place a portion of crushed meringue in the bottom of each serving glass or bowl. Spoon about 2 heaping tablespoons of macerated berries over the meringue, then add a generous dollop of whipped cream. Repeat the layers if your serving dish allows, ending with whipped cream and a few whole or slightly crushed berries on top for decoration.
  4. The dessert can be made 20–30 minutes ahead and kept chilled. Alternatively, you can prepare components up to a day ahead: refrigerate the macerated berries and the whipped cream separately, and store meringues at room temperature so they stay crisp until assembly.

Tips and Variations

  • Substitute strawberries, blackberries or blueberries for raspberries, or use a mix for more color and flavor.
  • Add a splash of fruit liqueur or citrus zest to the berries for extra brightness.
  • For a nutty variation, replace vanilla with a small amount of almond extract, or sprinkle toasted sliced almonds over the top for crunch.
  • If you prefer a lighter version, swap half-and-half for part of the cream, but note the texture will be less rich.
  • To keep meringues crisp, store them in an airtight container at room temperature and assemble the dessert just before serving.
