Puffed honey cereal is one of those nostalgic pantry staples that instantly brings back memories of simple breakfasts, sweet treats, and familiar New Zealand flavours. Light, crisp, and coated with honey sweetness, it has been enjoyed in homes across the country for many years and remains a favourite for both children and adults. There is something naturally comforting about honey as an ingredient too. It feels warm, familiar, and connected to home baking, which makes it a perfect match for a creamy no-bake cheesecake.
This Honey Bubble Cheesecake turns a classic breakfast cereal into a fun and memorable dessert. Instead of using a traditional biscuit base, the cheesecake begins with a puffed honey cereal crust made with melted marshmallows and butter. The result is chewy, crisp, sweet, and full of texture. It sets firmly enough to hold the filling, while still keeping that playful honey bubble character that makes the recipe so appealing.
New Zealand has many beautiful honey varieties, and this easy cheesecake recipe is a delicious way to enjoy your favourite one. A lighter honey will give the filling a gentle sweetness, while a stronger honey will create a deeper flavour. The filling itself is smooth, creamy, and simple to prepare, made with cream cheese, whipped cream, honey, and gelatin to help it set. There is no baking required, which makes this dessert especially useful when you want something impressive without turning on the oven.
This no-bake honey cheesecake is ideal for sharing at family gatherings, weekend lunches, celebrations, or whenever you want a dessert that feels both nostalgic and a little different. It has the comfort of a childhood cereal bowl, but presented as a chilled, creamy slice. If you love honey-flavoured desserts or are looking for a creative cheesecake with a cereal base, this recipe is a simple and satisfying option.
So, if you are not starting the day with a bowl of puffed honey cereal, why not enjoy those same familiar flavours in cheesecake form? With its chewy honey bubble base and silky honey cream cheese filling, this dessert is sweet, easy, and full of charm.

-
80g
Puffed Honey Cereal -
100g
Marshmallows (White if possible) -
30g
Butter
-
300ml
Cream -
500g
Cream Cheese (2 x 250g Tubs) -
200g
Liquid Honey -
3
Teaspoons
Gelatin -
3
Tablespoons
Boiling Water
-
Line or lightly grease a 20cm springform cake tin, making sure the base and sides are prepared before you begin. Set the tin aside while you make the honey bubble base.
-
Place the butter and marshmallows in a large pot over low heat. Stir or whisk gently until the mixture has melted and become smooth. Add the puffed honey cereal and mix well until every piece is evenly coated.
-
Transfer the mixture to the prepared tin and press it firmly and evenly over the base. Because the mixture can be sticky, lightly oil the bottom of a mug or tumbler and use it to press the cereal layer down. Once the base is compact and level, place it in the fridge to set while you prepare the cheesecake filling.
-
Add the cream cheese to a large mixing bowl and beat with a handheld mixer until smooth and creamy. Pour in the honey of your choice and continue beating until fully combined and the mixture looks even.
-
Dissolve the gelatin in 3 tablespoons of boiling water, stirring until no granules remain. Add the dissolved gelatin to the cream cheese mixture and beat again so it is evenly incorporated.
-
Pour the cream into a large jug or separate bowl and whip until soft peaks form. Gently fold the whipped cream through the honey cream cheese mixture until the filling is smooth, light, and well combined.
-
Pour the cheesecake filling over the chilled honey bubble base and smooth the top. Cover the tin and refrigerate for 4 to 6 hours, or overnight if preferred, until the cheesecake is fully set. When ready to serve, remove from the tin, slice, and enjoy a creamy dessert with a sweet taste of childhood.
