Ingredients

  • 1 oz fresh squeezed lime juice
  • 2 oz gin of your choice
  • 1 oz mint syrup (recipe above) or use simple syrup to taste
  • 4 oz chilled sparkling water or club soda
  • Thinly sliced cucumber, for garnish
  • Sliced lime, for garnish
  • Fresh mint sprigs, for garnish
  • Ice, as needed

Instructions

  1. In a serving glass, combine the lime juice, gin, and mint syrup. Stir gently to combine.
  2. Add a few slices of thin cucumber and a couple of lime slices to the glass for flavor and visual appeal.
  3. Top with chilled sparkling water or club soda and stir lightly so you don’t lose the bubbles.
  4. Fill the glass with ice, garnish with a sprig of fresh mint and additional cucumber or lime slices if desired.
  5. Taste and add a bit more mint syrup if you prefer a sweeter, more herbal drink. Serve immediately.
